Surat Thani, Oct 8 – Adding an idea to Chaiya salted eggs, a famous specialty of Surat Thani Province, by making waffles stuffed with Chaiya salted eggs, the first in Thailand. Delicious and well-rounded, customers are impressed, and it generates income to support their families.

Waffles or honeycomb desserts with overflowing filling of salted eggs from Chaiya are considered the first in Thailand. It is a unique recipe of Ms. Penprapa Poonthong or Pee Tak, age 53, who has been selling honeycomb desserts for almost 10 years. In the beginning, she sold regular honeycomb desserts using the old-fashioned recipe. Later, she devised a recipe different from regular honeycomb desserts, so she tried making them with overflowing filling of salted eggs from Chaiya. Customers were impressed and it has generated income to support her family to this day.

Phi Tak said that waffles with overflowing salted egg filling must use only Chaiya salted eggs and use only the egg yolks as the filling. The distinctive feature of Cha
iya salted eggs is their natural oiliness, beautiful red color, and no fishy smell. The egg whites are mixed to make the batter. The method of making them is no different from making regular fillings. However, Chaiya salted egg yolk filling can be made in 2 ways: steam the egg yolks first and then use them as the filling, or use fresh egg yolks as the filling. There is a little secret to make it delicious and well-rounded without a fishy smell.

Phi Tak said that at first, when she set up a booth at Koh Samui, foreign tourists came to see and asked what it was, so she said it was salted egg waffles with overflowing filling. The tourists laughed, but when they tried it, they said it was very good and bought a lot. It was sold for 30 baht per set, or 45 baht for 2 sets. In addition, there were waffles filled with taro, sweet potato, corn, chicken sausage, shredded egg yolk, fish balls, seafood, raisins, crab sticks, and many more to choose from. – Thai News Agency
