Yasothon, Yasothon villagers have joined together to form an agricultural cooperative to process termite mushrooms or termite mushrooms into brine mushrooms in bottles and cans, generating over 1 million baht in income per year.

Nong Ueng Area Development Project under the royal initiative, Village No. 12, Kho Nuea Subdistrict, Mueang District, Yasothon Province, villagers have formed a group to form an agricultural cooperative to process food from the forest. The product that makes money for the group right now is processing termite mushrooms in brine, canned and bottled for sale. Last year, there was an income of more than 1 million baht. This year, with a large amount of mushrooms, it is expected to generate income of about 2 million baht.

Method: Clean the mushrooms and blanch them in boiling water for about 5 minutes, then soak them in cold water and set aside to drain. Pack the mushrooms in glass bottles or cans, add boiled salt water and steam to sterilize them, then close the lid and steam again to
get rid of air bubbles and sterilize them again. Label the product under the name Wanathip. Processing will allow the mushrooms to be stored for up to 1 and a half years.

Currently, porcini mushrooms in brine are in high demand by customers in Yasothon and other provinces, including exporting to China. Restaurants in particular are in high demand and are ordering every day. The taste of canned mushrooms is similar to fresh porcini mushrooms. They can be used in a variety of dishes, such as porcini mushroom curry, porcini mushroom salad, porcini mushroom stir-fried in oyster sauce, and many other dishes. The selling price is 380 baht per bottle, while the price of a can is 230 baht.
